3 Takes on Avo Toast

Want to upgrade boring toast? Mash an avocado on top! It is that simple. Avocado toast makes the perfect breakfast, lunch or snack. Adding avocado to any food is a good way to get some healthy fats into diets. They are high in potassium, vitamins E, C and K and they also are loaded with fiber.

Ashley Velardi, a student at SUNY Plattsburgh, eats an avocado every day. “They are just really filling. Sometimes I mash it up and add it to my toast, but sometimes I just eat it straight from the shell. Might be gross to some people, but it’s my go-to,” Velardi said.

Toast up the desired bread, add the avocado and go to town trying out different toppings! Here are three classic ways to make avocado toast.

1. Avo Toast with Spinach or Kale

This toast is loaded with greens. Saute some spinach or kale in a pan until it is wilted. Mash the avocado onto the bread and top with the delicious nutrient-rich vegetable. To give it a little kick, sprinkle on some chili flakes.

2. Avo Toast with an Egg

Adding egg on top of the avocado toast takes it to the next level. This is a fast and filling breakfast for those looking to get in some extra protein. In the picture shown, the egg is fried, but it can be poached, scrambled or even hard-boiled. This recipe is completely customizable. Pro tip: add some of Trader Joe’s “Everything but the Bagel” seasoning on top. It adds the perfect flavor of onion and garlic.

3. Avo Toast with Tomato

“My favorite way to eat avocado toast is with tomatoes. I even like to add raw onions, but I know that’s not everyone’s thing,” Velardi said. Cut up a juicy tomato, put it on top of your avocado toast and add some salt and pepper to taste. Adding a sprinkle of feta cheese on top will give it another creamy component.

There are so many ways to make avocado toast. Test out different recipes or make your own. Try adding some bacon or different veggies for some delicious combinations.
