Trying to eat healthy on a budget while also being a broke college student is difficult. However, some go-to recipes will have you feeling like a chef while not spending an immense amount of cash.

Salmon is rich in Omega-3 fatty acids, is high in protein and carries numerous vitamins that a person’s body needs to stay healthy. You may think that cooking salmon is difficult, but here is a simple recipe that will leave your mouth watering.

Ingredients:

  • 1 salmon filet
  • 1 fresh lemon
  • 2 cloves of garlic
  • Ground pepper
  • Salt
  • Butter or cooking spray
  • Lemon pepper marinade

1) Let your salmon sit for 15-20 minutes before cooking to make it room temperature.

It is a good idea to let salmon get to room temperature to ensure it will cook all the way evenly through. While you are letting your salmon rest, preheat your oven to 450℉.

2) Get a baking sheet and place a sheet of aluminum foil on it.

After placing your aluminum foil sheet on the baking sheet, use either butter or cooking spray to coat the aluminum foil lightly. This will ensure that your salmon will not stick to the aluminum foil.

3) Pour about two tablespoons of the lemon pepper marinade onto the buttered sheet of aluminum foil.

Doing this will make sure that the bottom of your salmon filet will not dry out.

4) Place your fillet on the sheet of aluminum foil and season.

Pour some of the lemon pepper marinade on top of the salmon filet. Use your salt and pepper to add extra seasoning to the salmon.

5) Chop up your garlic cloves.

After chopping your garlic cloves into small pieces, sprinkle them onto your salmon fillet generously to give it more flavor.

6) Cut your lemon into thin slices.

After cutting your lemon into thin slices, place the slices on top of your salmon.

7) Fold the foil.

A. Take the two longer edges of the aluminum foil, join them together in the middle and fold them over to one side.

B. Take the two pieces of foil at the ends and fold them inward. This makes sure that your salmon does not dry out and retains the moisture that is created through the heat.

8) Place in the oven for 35-40 minutes on broil or until the salmon is fully cooked.

9) Enjoy your food.

This simple recipe does require some effort but will help you get the nutrients you need to stay healthy. Make your way to your local supermarket and get the ingredients you need so that you can start on your healthy eating journey.
